Crafted using the anaerobic honey process, this coffee undergoes a meticulous post-harvest method designed to enhance its depth and complexity. After hand-picking, the cherries are thoroughly washed and pulped to remove the outer skin. The beans, still coated with their sticky mucilage, are then sealed and fermented anaerobically for 72 hours. This controlled, oxygen-free fermentation intensifies the coffee’s natural sugars and fruit-forward qualities. Following fermentation, the beans are dried slowly under direct sunlight until the ideal moisture content is achieved, ensuring stability and clarity in the final cup.
The result is a vibrant and layered coffee with a rich sweetness, balanced acidity, and a smooth, lingering finish. This lot highlights the innovation of Indonesian processing while preserving the unique terroir of Temanggung.
