Cocapil was established in 2001 with the aim of creating opportunities for small and medium farmers to present the best of Brazil's coffee to the global market. This cooperative has managed to produce uniquely flavored, high-quality coffees through sustainable agricultural methods, modern technologies, and precise processing, making it one of the key players in the global coffee market and solidifying its position in international markets to this day.
About the Farm and Coffee Processing Methods
Cocapil's farm uses environmentally friendly practices and employs only organic-mineral fertilizers to protect plants and animals. The coffee is selectively harvested at the Mogiana heights, with only ripe cherries picked carefully by women. The cherries are then transferred to special tanks where, after removing all air through a valve, they undergo fermentation for 120 hours under complete temperature control. After 120 hours of fermentation, the coffee is moved to African drying beds and left undisturbed for 48 hours in a single layer. The thickness of the coffee is then doubled and left again for another 48 hours in the same condition. Following this, the thickness increases once more, and a tarp is placed over the coffee to dry in the shade for 12 days. Finally, the drying process continues under sunlight on African beds for 10 days, flipping the coffee every 30 minutes. After the final drying, the coffee is placed in bags and stored for 25 days in a warehouse.
