Fellows Farms: A Network of Local Small Farms
Fellows Farms refers to a collection of small local farms located to the south of the Cauca region. Cauca is known for cultivating native Colombian coffee varieties and typically collaborates with Inmaculada for post-harvest processing to enhance and distinguish the flavor profiles of their coffees.
In a chance encounter between Inmaculada's farm and Cauca farmers in 2022, the Inmaculada team noticed issues regarding the preservation and enhancement of the inherent quality of coffee cherries, largely due to climate changes.
The initial solution for an immediate outcome to maintain and enhance the flavor quality of the coffees involved leveraging Inmaculada's financial capacity. They purchased limited batches of high-quality products from these farmers at higher prices, assisted in processing the coffees, and provided agricultural training, leading to significant changes in this regard.
Pink Bourbon and Castillo Varieties
Pink Bourbon and Castillo are recognized as native Colombian varieties.
Pink Bourbon, easily identifiable by its beautiful pink cherries, reportedly originates from the Huila region and has expanded to other areas due to its adaptability and flavor characteristics. Meanwhile, Castillo was developed by Colombia’s National Coffee Research Institute (Cenicafé) in 2005, showing better taste results than earlier varieties like Colombia-6 and Tabi.
The Wonders of Pink Bourbon and Castillo
Washed Pink Bourbon exhibits clear complexity with bright fruity notes alongside rich caramel flavors and hints of floral aroma. Castillo presents chocolatey and cherry-like flavor characteristics with traces of citrus.
